it's steeplechase day and who doesn't love good food, great friends & a horserace?
the 75th running of the iroquois steeplechase is today in nashville. steeplechase is usually mother’s day weekend every year for the last 75 years (this year mother’s day moved, but who’s counting.) it is one of the largest fundraisers for monroe carell jr children’s hospital at vanderbilt, and having had reason to use the hospital a few times, i cannot think of a better reason to party.
steeplechase (or as it is affectionately referred to, “peoplewaste”) is something of a right of passage for the young people. they gather their friends, pack their suvs with tents, tables, chairs & coolers, dress in their “darty” best (“day party” for you neophytes) with large hats, bring tasty treats & bevys to the infield, all to watch watch the ponies run.
the infield revelers, as well as box holders, are there to eat & drink with their besties. you will see all manner of menus from the catered tents, to fine box lunches to potluck, each delicious in their own way. there are even good-natured party novelties with sayings such as “what horse races?”
in honor of this noble day of good clean fun, i am sending the co-ed & her squad off with some of their fave peanut butter cocoa krispies bars. my grandmother, mamie, made them, as did my mother & now i have the honor. these bars are the perfect mix of salty sweet, super easy to make, travel easily & always a crowd pleaser. here’s the recipe:
cocoa krispies peanut butter bars
1/3 cup karo syrup
½ cup brown sugar
½ cup peanut butter (i use all natural crunchy for more crunch)
3 cups kellogg’s cocoa krispies
combine karo & brown sugar in saucepan over moderate heat, stirring until mixture bubbles around the edges. remove from heat. stir in peanut butter until completely mixed. add in cocoa krispies & stir well until coated. pour mixture into your favorite brownie or cake pan, using parchment or saran wrap to press together. allow to cool on counter & then cut into bars. you may double the recipe for larger pans or thicker bars.
so if you love peanut butter & are a fan of chocolate, then these are the perfect last minute, no bake dessert. i always keep supplies on hand for those moments when i need a quick option.
